The plumbing would be a lot more difficult, the two fixtures use different size drains and venting becomes more difficult with toilets, and alternating the fixtures exacerbates those venting issues on top of the sizing issues. On top of all that drain pipes are pretty large and they want to cram all of that stuff in tight areas.

In short, it would be a nightmare to install this way, very difficult, expensive, and time consuming.

Funilly enough this exactly the same sentiments in the tech industry when a user experience designer's ideas reach the dev team lol
