Living With Bipolar What do you cook?
What are your favorite go-to meals to make when you're feeling really bad and don't feel like cooking? Do you eat a lot of leftovers?
I'm getting tired of takeout. And I don't really like cooking anyway, but simple meals like soup are fine. I love making split pea soup for example and eat several meals from it during the week.

I used to really enjoy cooking, when I was younger and before I was diagnosed.
Now, it's either basic stuff like chicken breast rice or pasta and baby spinach. Or I use Hungry root. Its a service which sends you meals like premade salads or wraps or stuff you can make in about 10-15 minutes max. Protein is either precooked or cooked fast like fish. Simple to cook veggies. Rice that cooks quick in the microwave.
My meds have killed my appetite so it's really important that I have meals that don't take much effort. And I work from home so I usually have leftovers for lunch.
It would be cheaper if I shopped for groceries and but if I didn't use it I'd probably be ordering takeout a lot and that's expensive and usually less healthy.

Hungry Root looks great. They have a wide variety of meals and lots of good recipes. Good suggestion!

I tried out other meal kits, Hungry Root is what I've stuck with. They also have groceries as well

I can already tell that I'm going to save money on frozen meals and food delivery. So exciting.

I'm gluten-free so I do a lot of frozen/ready to go healthy meals like Annie's GF broccoli and cheese pasta, Kevin's meals, BetterGoods and Evol meals ^_^ I also like to make homemade ramen with all the yummies: egg, chives, etc.

If it's just for myself it'll be a grilled cheese, quesadilla, or kraft Mac and cheese (specifically the spirals).
But if I have to make an actual decent meal, my go-to is this:
Boil 1 box of a smaller-shaped pasta. (I use Brami curly Mac to add more protein to the meal). Meanwhile, brown 1 lb of 93% ground beef. If I'm feeling motivated enough, I'll blend some microwaved frozen veggies with a couple jars of red pasta sauce with some pasta water while the beef cooks, this helps add more nutrients to the dish. When the noodles are done, strain them and then add them back to their pot. To the same pot, add the beef, veggie sauce or just sauce straight from the jar if you didn't feel like adding the veggies, 1 can of corn niblets (drained of water), and about half a bag of shredded cheddar cheese.
Depending on the ingredients you get it can be cheap as fuck. It's very filling and makes a ton of leftovers so you don't have to worry about cooking for the next couple of days. It's also just super easy to make and only takes like 20 minutes.

Honestly I cook a light, healthy dinner for myself ( like Greek chicken salad) and then a separate normal meal for my family ( who don’t need to diet like me. I’m on the CSIRO diet. It’s the Australian peak scientific body)

Get some rotisserie chicken from Costco and shred it, get some consume from a local Mexican restaurant and make some good-ass, easy-ass chicken quesadillas by marinating the chicken in the consume or just using the consume to dip. It's easy but also makes you feel like you did something :) it's one of my comfort foods now

I have recently discovered this. It's extremely quick and easy. Get a potato. Any kind. Wash it. Poke it with a fork or knife a few times. Put it in a microwavable bowl or plate.
Next heat it for 6-8 minutes. Times vary. If you're not sure do 5 minutes then poke it then do 2 more if it needs it.
Anyways now break it open and put whatever you like in there. I do butter and cheese. I would put sour cream but I've never bought that and have no idea where I would find it in the store.
Anyways pop it back in for 0-2 minutes depending on what you put inside of it.
Enjoy!

I make chilis, lentil soup, black bean and corn soup, etc. Lots of soup that involve chopping up vegetables and throwing it in a pot for hours. I end up with so much leftovers I end up freezing some of it to have like weeks later.

Mini beef quesadillas yesterday. Just cook some hamburger, fry the tortilla in a pan with butter, add cheese and meat to one half of tortilla and then fold it over. Continue to fry in butter untill all the cheese is melted. It's really good and super simple, you don't even have to season the beef if you don't feel like it

Fake pizza: slice of naan, smear of good sauce (I like Trader Joe’s peppers and eggplant), slices of fresh mozzarella and either fresh basil leaves or dried. If you’re adventurous, maybe some olives. Bake in hot oven until melty and the naan has crisped. For me, about 12 minutes.
Grilled cheese and carrots is also pretty common.
Right now I seem to be trying to find creative new ways to fill tortillas.

Ground beef with fajita seasoning and roasted potatoes. Delicious, filling, and minimal effort.
